You can get both males and females. However, some Pokemon have different gender ratios. So if for instance you breed a Ditto with an Eevee, you'll get lots of male Eevees, because Eevee's male ratio is like 90% or something (really odd). A Pokémon like Pidgey has a nice 50-50% ratio for males and females.
The gender ratio, by the way, is totally determined by what kind of baby you're getting; not by what kind of parents your baby has. So if you breed a male Poochyena, which has a male-female ratio of 50-50%, with a female Eevee, all the eggs will be Eevees with that same sucky 90-10% ratio. They won't get to benefit from the Poochyena's gender ratio at all. The only way to get a rare female Eevee, is to hatch a lot of eggs and hope you get lucky.
